Changing ceiling hgt on entire floor?

Well, I'm sure I must be going about this the hard way. I started my building shell out with a 10' ceiling height, then started drawing interior walls. Every time I make some interior changes, the rooms I change go back to 97 1/8 ceiling. I then have to open the DB on each room to change it back to 120. Is there an easier way to do an entire floor at once? But not the whole house, because the second floor has 9' ceilings.

Also, on the same note, can I change a whole whose instead of individual rooms from 2x10 joists to 11 7/8 I-Beams?

..and set your framing defaults for the other.
