Plaster is nice but it is very messy to take down..I'll take your word about strapping moving..
Have to say for the price I would use strapping,to many pros for..With nailing guns it's not that hard to put up..It used to be a killer to nail by hand..
Also when you build inside partitions it is less work than adding nailers over the walls..........
