    Generally speaking, if you want to use a custom countertop that is higher or lower than the default 36", you can but I feel it is best to make the custom countertop away from the cabinet (if other than default 36"), set the cabinet height to fit the countertop, then slide countertop over cabinet. If you start out putting the custom countertop on top of the cabinet, be sure you make adjustments to the cabinet first. I think Bill was trying to say this too. Bill's description of a cabinet as being a "place holder" is pretty good.
