Under Room Specifications is it possible to create a custom room lable?

Chief gives different properties to different room names (porch, deck, open below, etc)- what you probable want to do is choose the room name closest to what it is (see “The Reference Manual”) and open the label as a text item and change it whatever

You can uncheck show room label and add one with text.

I normally choose one that is similar to what I want and then change the name by selecting the "given" name and editting the name to what I want.

For example: When I have a Dinette (kitchen eating area), I select Kitchen and then edit the name to read "Dinette". That way, the room sizes are true and the floor surfaces are what I want them to be in each space.
