Whenever I try putting in a custom height my cabinet is coming out 3" shorter than the size I type in, but the dimensions
show the size I entered in. What am I doing wrong?

You know where this thread belongs, don't you? To your topic, I suggest you take a good look at the cabinet dialog spec, and what can be done with it.
I build kitchen from time to time and my base cabinets, while the countertop might be up at 36 inches, might be boxes only 30.5" tall. Chief treats a base cabinet as having a height equal to its toekick, plus its box, plus its countertop thickness. Wall cabinets are different.
So enjoy your time fooling with the spec box and the dialog and entries it takes to get everything you need in wall cabinets, base cabinets, tall cabinets, and more. As you can tell by looking the gallery pages of kitchen and bath renders at the Chief website, anything is possible. You just gotta know how.
